Cucumber and Orange Salsa
Add a fresh, crisp crunch and extra flavor to meals with this salsa.
Surprise! Salsa doesn't have to be made with tomatoes, or paired with salty, fried tortilla chips. Spice up a piece of lean chicken, fresh fish or salad with this unconventional salsa, which uses crisp cucumbers as its base.
- 1 cup diced cucumber
- 1 Tablespoon fresh orange juice
- 1/2 cup chopped orange sections
- 1/4 cup diced red onion
- 2 Tablespoons finely chopped
- Jalapeno peppers
- 1-1/2 Tablespoons white wine vinegar
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Combine all ingredients in a bowl; stir well. Serve chilled or at room temperature.
