Blueberry Vanilla Pudding

Mix A

  • 1 cup of frozen blueberries
  • 3 tablespoons of chia seeds
  • 1 tablespoon of cane sugar

Mix B

  • 1 cup of vanilla coconut milk beverage
  • 1 tablespoon of cane sugar
  • 3 tablespoons of chia seeds
  • 1 tablespoon of vanilla extract


Mix A

  • Heat up the frozen blueberries in a small pot for 4-5 minutes.
  • From Mix A ingredients, add the cane sugar and chia seeds.
  • Fill up the bottom of 2 glasses with this blueberry mix, and compress it evenly. Let it cool down.

Mix B

  • As for Mix B, heat up the coconut milk and cane sugar first.
  • Mix in the chia seeds and vanilla extract. Let the mixture cool down for 10 minutes in the fridge.

Combine Mix A and B

  • Pour this vanilla mixture over the blueberry mixture in the glasses.
  • Let it cool down in the fridge until the chia seeds become a jelly-like texture.
  • Serve cold.
