Wild Blueberry Clafouti

Ingredients

  • 1 ¼ cup whole milk
  • 1 cup sugar, divided
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/8 teaspoon salt
  • ½ cup flour
  • 2 cups fresh or frozen wild blueberries
  • 2 teaspoons finely grated lemon zest
  • Confectioners’ sugar and whipped cream, optional garnishes

Preparation

Preheat oven to 350 degrees.

In a blender or food processer, combine milk, ½ cup sugar, eggs, vanilla, salt and flour. 

Spray an 8 cup glass baking dish and add a half inch layer of egg mixture; bake for 7-10 minutes.

Distribute blueberries, lemon zest and remaining sugar atop bottom layer; top with egg mixture.  Bake for 40-45 minutes until firm.  Be careful not to overbake as custard will get tough. Serve warm or at room temperature.
