  • ¼ cup whole wheat bread crumbs
  • 1 large egg, beaten
  • ¼ cup light mayonnaise
  • Juice of 1 large lemon
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped Italian parsley
  • 1 shallot, minced (about 1 tablespoon)
  • Dash hot sauce (optional)

Yogurt sauce:

  • 1/2 cup nonfat plain Greek yogurt

In a medium bowl, combine salmon, lemon zest and juice, egg, mayonnaise, breadcrumbs, shallot, hot sauce, parsley, salt and pepper; mix gently with a fork.
