Holiday Apple Stuffing

  • 8 slices whole wheat bread, toasted, cubed
  • 4 slices white bread, toasted, cubed
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 large onions, chopped
  • 6 celery stalks, chopped
  • 2 apples, peeled, cored, medium chop
  • 1 ½ cups fresh cranberries, chopped
  • ½ pound sweet Italian sausage, removed from casings, cooked, crumbled (optional)
  • 2 eggs
  • 3 cups low sodium chicken stock, divided
  • ½ cup apple juice
  • 1/8 teaspoon sea salt
  • Freshly ground pepper to taste
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh sage
  • ¼ cup chopped fresh parsley


Preheat oven to 325

In a large nonstick skillet over medium high heat, melt butter and olive oil; add onions and cook for 10 minutes until browned; set aside.  Add celery to pan along with ¼ cup chicken stock and cook until softened. 

In a large mixing bowl, beat eggs; add bread, apple juice and 1-2 cups chicken stock, stir to combine and let sit to allow bread to soften. Add onion, celery, apples, cranberries, (sausage) and spices; toss to combine and add more chicken stock to evenly moisten mixture.  

Place stuffing into large roasting pan sprayed with cooking spray.  Bake for 60-90 minutes; cover with aluminum foil for the first 20 minutes, then uncovered, turning every 20-30 minutes until golden brown.
