Thai Quinoa Turkey Salad

Ingredients

  • 1 cup Quinoa, uncooked
  • 2 cups chicken stock
  • 2 tablespoons red Thai paste
  • 10 oz. turkey breast, cooked
  • 1/2 cup cilantro
  • 1 red pepper
  • 1 spring onion
  • 1 carrot (grated)
  • 2 cups spinach, cabbage, kale or other green

Sauce

  • 3 tablespoons smooth peanut butter or other nut butter
  • 3 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • Crushed fresh ginger
  • 1/2 cup cashews

Preparation

Cook Quinoa in stock. Heat Thai paste in pan and cook turkey in paste. Put cooked Quinoa and turkey in large bowl and add veggies. Mix sauce ingredients and add to bowl. Mix all together, add a few cashews on top and enjoy! You can choose the spice level by adding more/less Thai paste.
