Becky's Granola

Recipe submitted by Pro Cyclist Katie Hall

My mom makes the best granola of all time, and she mails it to me in gallon zip-lock bags. She got this recipe from her friend, Becky Hall.

  • 1/4 cup sesame seeds
  • 1/4 cup flax seeds
  • 2 and 1/2 cup oatmeal
  • 1 cup bran (wheat or oat)
  • 1 cup wheat germ
  • 1 cup coconut (unsweetened)
  • 1 cup sunflower or pumpkin seeds
  • 1 cup grape nuts (optional)
  • 1 cup crispies cereal
  • 3 cup dried fruit (mango, pineapple, cherries, blueberries, diced apricots, craisins, raisins)
  • 3 cup nuts (cashews, pecans, walnuts, almonds)
  • 3/4 cup oil
  • 3/4 cup honey
  • 1 teaspoon vanilla

Mix all of the above (except for the fruit) in a roasting pan. Heat oil and honey* together. Add vanilla to the honey mixture. Pour over cereal mixture in roasting pan and stir to coat evenly. Bake 25 minutes at 350°F, stirring occasionally, until dark golden brown. Stir in the fruit after it comes out of the oven.

*Can substitute maple syrup for honey and a very small amount of orange juice for oil.
