Curried Chicken Chowder

  • 2 cups diced sweet onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 tablespoons oil
  • 2 garlic cloves minced
  • 6 cups chicken broth
  • 1 lb. Yukon gold potatoes cubed


Sauté first 3 ingredients in oil for 5 minutes, add garlic cook for 1 minute.

Add broth and next nine ingredients. Bring to a boil, simmer for 20/25 minutes until vegetables are tender.

Season with salt and pepper. Serve with desired toppings.
